Malt extracts

Malt extract is a product obtained by extracting and concentrating a solution of extractive substances from malt and cereal grains.

Malt extracts are used for kvass production, in baking, confectionery industry, brewing industry, in the production of products for children’s and sports nutrition,  in the production of lactic acid starter for curds, cheeses and others.

In addition, baked goods made with malt extract are for diabetics and people on special diets. Such baked goods are easily digested, helps to increase the body’s resistance to metabolic disorders.

Malt extracts:

  • optimize production technology due to the absence of the need to brew malt;
  • improve the taste and color of the product and give it a malty aroma;
  • promote more active yeast growth, thereby increasing the volume of output;
  • keep the crumb and crust elastic;
  • help to achieve uniform porosity, crispy crust with beautiful color, crumbly;
  • increase the shelf life of baked goods;
  • allow you to diversify your product range.

In confectionery production malt extracts are used in the production of: gingerbread, breads, bars, waffles, breadcrumbs, breadcrumbs, chocolate creams, granola bars, etc.

Варим пиво в домашних условиях

Сырьё: экстракт солодовый ячменный светлый охмелённый, хмель гранулированный. Содержание сухих веществ ≈ 72%.

Расход экстракта на 1 дал (10 литров) пива:

  • 11 % пиво – 1,53 кг;
  • 12 % пиво – 1,68 кг;
  • 13 % пиво – 1,82 кг.

Ёмкость, в которой собираетесь купажировать экстракт с водой, должна быть оснащена паровой рубашкой с мешалкой.

В подготовленную ёмкость наберите воду рН не более 6,0 при температуре 85°С. При работающей мешалке добавьте экстракт. Доведите температуру затора до 100°С, кипятите 15-20 минут и далее через теплообменник охлаждают до температуры 9-13°С и можете направлять на брожение.

В полученное сусло добавьте пивные дрожжи. Жидкие дрожжи – 5 г. на 1 л., сухие – по инструкции производителя.

Контролируйте процесс брожения до момента, когда остатки экстракта станут видны. Затем охладите, чтобы дрожжи осели, до температуры 3-4°С, пиво снять с дрожжей. Снятое с дрожжей пиво должно дображивать минимум 5-10
